Mai Tai's: everyone's favorite tiki cocktail! We'd been wanting to get back to exploring new drink recipes with our Pineapple & Jalapeño Margarita Mix, so we dove headfirst into these potent potables.
The classic Trader Vic Mai Tai uses dark rum only, but after messing with a few variations, we found we liked that using a combination of silver and spiced rums added a little brightness to the recipe. After sampling quite a few rums, we decided to use Don Cartavio rums, but there are plenty of excellent options out there.
In the context of the drink, the Pineapple & Jalapeño Margarita Mix adds a citrusy tartness, a slightly vegetal flavor, and a very gentle warmth on the back of the palate. Most people don't know it, but Bravado Spice juices fresh jalapeños to make our margarita mix. Most of the heat remains with the pulp, and instead, you end up with what is generally a very gentle warmth and the vegetal flavor of the fresh jalapeños.
Orgeat is also very traditional to the original Mai Tai recipe, but if you're having trouble finding it you can just add a few drops of almond and vanilla extract to some simple syrup in a pinch. If you don't have simple syrup, you can make some very quickly by adding equal parts (by weight) sugar & water and mixing them over low heat until the sugar is completely dissolved. If you don't have a kitchen scale, you can use about 1 cup of sugar and 1/4 cup water. The grenadine doesn't do much for flavor, but it gives the drink a pretty pinkish color, and that's just as important as anything else. Garnish with a lime, a slice of pineapple, or a cocktail umbrella. We hope you enjoy this drink as much as we did!
1 oz - White/Silver rum
1 oz - Spiced rum
1 1/4 oz - Bravado Spice Pineapple & Jalapeño Margarita Mix
3/4 oz - Orange curaçao or orange liqueur
1 oz - Fresh lime juice
1/2 oz - Orgeat (almond syrup)
1/2 oz - Grenadine
- Crushed ice
- Slice of lime, pineapple, or sprig of mint for garnish
Add all the ingredients into a shaker.
Add about a cup of ice
Pour over crushed ice into a highball glass
Garnish with a sprig of mint, a slice of lime, or a wedge of pineapple
For a slightly spicer drink, add an extra 1/2 oz of Bravado Spice Pineapple & Jalapeño Margarita mix.
For a sweeter drink, add an extra 1/4 oz of Orgeat.
