New England Lobster Rolls

INGREDIENTS:

4 LOBSTER TAILS

2 OZ BRAVADO SPICE CREAMY HERB & JALAPEÑO HOT SAUCE

2 C BUTTER

1/2 C MAYONNAISE

1/2 C CHOPPED CELERY

1/8 C CHOPPED CHIVES

2 TBSP FRESH LEMON JUICE

2 TSP BLACK PEPPER

1 TSP DILL

1 TSP SALT

2 NEW ENGLAND STYLE HOT DOG BUNS

INSTRUCTIONS:

1. Remove the meat from the lobster tails and cut into smaller (about 3/4 in. chunks)

2. In a sauce pot, melt the butter over medium heat. Poach the lobster until slightly springy to the touch. Remove from butter.

3. Mix the lobster pieces, Bravado Spice Creamy Herb & Jalapeño Hot Sauce, mayo, celery, chives, lemon juice, black pepper, dill, & salt in a bowl.

4. Fill the buns with the lobster filling and serve!
