4 - Lobster Tails
2 oz - Bravado Spice Creamy Herb & Jalapeño Hot Sauce
2 c - Butter
1/2 c - Mayonnaise
1/2 c - Chopped celery
2 Tbsp - Chopped chives
2 Tbsp - Fresh lemon juice
2 tsp - Black pepper
1 tsp - Chopped dill
1 tsp - salt
2 - New England style hot dog buns
Remove the meat from the lobster tails and cut into smaller (about 3/4 in. chunks)
In a sauce pot, melt the butter over medium heat. Poach the lobster until slightly springy to the touch. Remove from butter.
Mix the lobster pieces, Bravado Spice Creamy Herb & Jalapeño Hot Sauce, mayo, celery, chives, lemon juice, black pepper, dill, & salt in a bowl.
Fill the buns with the lobster filling and serve!
