A weeknight dinner favorite that's perfect for a cozy fall evening. We added Aka Miso Hot Sauce to this simple recipe round out the flavor and bring in some heat. Fear not, the heat is tolerable but can easily be adjusted down (see not below). Additionally, if you're feeling feisty, we recommend starting with the 1 tsp of hot sauce and slightly adjusting at the end based on preference. The heat does build as you go!
Cook pasta according to package directions. Reserving 1 c of the pasta water before draining.
In a sauce pan, over medium heat, combine the butter and miso. Whisk together until butter is melted. Add ¼ cup of the reserved pasta water and continue whisking until miso is incorporated.
Add the Aka Miso Hot Sauce and continue whisking.
Add the pasta and toss with the sauce until well combined. Add the parmesan cheese and ½ a cup of the pasta water, stirring gently to allow the sauce to silken. If too thick you may add the remaining ¼ c of pasta water until the consistency is to your preference. Remove from heat.
Serve with garnish of your choice. Suggested garnishes: grated parmesan cheese, furikake, green onions
Recipe Note
-Our preferred miso is Miso Master but any will work. We found white miso led to a more delicate flavor.
-Do not use pre-grated or pre-shredded parmesan cheese. Anti-caking additives will not allow it to melt effectively. Trust us, you'll want to grate this yourself for the best result.
-1 tsp of the hot sauce is roughly a medium-high heat. It's not impossible but will build. For less heat start with 1/2 a tsp.
