Butterfly the chicken breast by placing one hand on top of the chicken breast and running a knife through the center to create two thin breast halves. Pat each breast dry and sprinkle with salt & pepper.
Create dipping stations by placing flour onto a large plate, beaten eggs in a wide, shallow bowl and breadcrumbs onto a large plate.
Take each breast and dredge it in flour, then the egg wash, then the bread crumbs and set aside until all breast are breaded.
Heat oil in a large pan (with raised sides) over medium-high heat until oil begins to glisten. Working in batches, place chicken breast into pan and fry until brown and crispy. About 3-4 min per side. Transfer to a plate lined with a paper towel or cooling rack. Repeat until all chicken breast are cooked through.
Turn broiler onto high. On a baking sheet, assemble each chicken by topping each breast with Bravado Spice Serrano & Basil Hot Sauce and a layer of mozzarella cheese on top. Broil chickens until cheese is browned and bubbly.
Serve over fresh pasta or alongside your favorite salad. Enjoy!
