We're talking incredibly crispy, fried chicken pieces tossed in a sauce that’s the perfect mix of sweet, savory, and seriously spicy. Thanks to a kick from ghost pepper Carolina Reaper peppers and a rich umami flavor from miso, this version blows the restaurant classic out of the water. There are few things as satisfying as that craving for crispy, sweet, and savory Chinese-American food. General Tso's chicken sits at the top of that list for a lot of people. That glossy sauce clinging to perfectly crunchy chicken is just hard to beat. But we felt the classic recipe could be even better, less one-dimensionally sweet and with a lot more character. This recipe is our answer. We kept the parts we love, like getting the chicken extra crispy with a light cornstarch batter. But we completely reinvented the sauce. It starts with a familiar base of garlic, ginger, soy sauce, and brown sugar. Then we hit it with the game-changer: our Bravado Spice Aka Miso Ghost-Reaper Hot Sauce. This isn't just for heat. The miso brings a deep, savory, umami flavor that adds incredible complexity, while the ghost pepper and Carolina Reaper pepeprs provides a profound, smoky heat that builds with every bite. Ingredients

3lbs boneless, skinless chicken breasts, cubed
2Tbsp + ¼ tsp Corn starch
¼c All-purpose flour
4-5c Vegetable or neutral oil
1tsp Bravado Spice Aka Miso Ghost-Reaper Hot Sauce
½c Water
2tsp Minced garlic
2tsp Minced ginger
¼c Low-Sodium soy sauce
¼c Packed brown sugar
¼c Rice wine vinegar
2Tbsp Chicken broth
1tsp ea. Salt & pepper
Sesame seeds (optional)

Directions

In a bowl, mix the cubed chicken, salt, pepper, 2tbsp corn starch, and ½c water. Mix well. If batter is too dry, add a little more water.
In a large wok or deep pan, heat the vegetable oil to 350°F. Working in batches fry the chicken until golden brown.
Drain the pot of all but 1Tbsp of oil. Add the minced garlic and ginger. Cook over medium heat until the garlic is fragrant, about 1 minute. Add the soy sauce, brown sugar, rice wine vinegar, chicken broth and Bravado Spice Aka Miso Ghost-Reaper Hot Sauce.
In a small bowl, whisk together 1Tbsp of water with ¼tsp of corn starch until a slurry forms. Whisk slurry to the pot until incorporated. Reduce heat and continue to cook until the sauce thickens slightly.
Add the fried chicken pieces to the pot and toss well until evenly coated. Serve immediately over rice and top with optional sesame seeds or slices chives.

Recipe Note

Don't Want to Deep Fry? You can still get crispy chicken. Toss the battered chicken with a bit of oil and cook it in an air fryer at 400°F for about 15-20 minutes, shaking halfway through, until golden and cooked. Then toss it in the sauce.
For a Gluten-Free Version: Use tamari instead of soy sauce and swap the all-purpose flour for a gluten-free 1-to-1 baking blend.
The Chicken: Boneless, skinless chicken thighs work great here too and will be even juicier than breasts.
