Preheat oven to 400°F.
On a lined baking sheet, place the tomatoes, onion and garlic. Drizzle with the olive oil and a few pinches of salt a and pepper.
Bake for 25-30 minutes, or until softened. Once softened, turn broiler onto high and cook for 3-5 minutes more. Remove from the oven and allow to cool.
In a high powered blender, add the roasted tomatoes, onions & garlic along with the hot sauce and basil leaves. Blend on high until smooth. Adjust salt and hot sauce if desired.
Place cream and blended mixture into a sauce pot. Set to medium heat. Allow soup to reduce- about 5 minutes. If you feel the soup has become too thick, add a little broth or water to thin it out to your desired consistency.
Garnish with a drizzle of cream, basil & extra hot sauce.
