Ingredients
6 eggs, boiled, peeled, chilled and chopped (see notes)
In a large bowl, add all the ingredients, gently folding to combine.
Serve by scooping onto bread as a sandwich, atop toast or over a spring mix salad and enjoy!
Recipe Note
Note on boiled eggs- we used 9 minute eggs for yolk texture that was cooked but still had some small jammy parts. Boil your eggs to desired temp and yolk texture.
