Spicy Tomato Gnocchi

Instructions

  1. Cook gnocchi according to package directions, reserving 1 cup of reserved pasta water.
  2. In a skillet, heat the butter and olive oil. Add the onions and sauté the onions until translucent but slightly golden. Add the garlic and cook 1 minute more. Add the salt and pepper, stirring to combine.
  3. Add the tomato paste and cook for about 1 minute, allowing the raw flavor to cook off. Add the pasta water and stir gently. Add the hot sauce and stir.
  4. Add the gnocchi and slightly reduce heat, allowing the sauce to slightly thicken. If too thick, slowly add more pasta water.
  5. Remove from skillet from heat. Top with parmesan before serving.
  6. Garnish with fresh basil, parsley and/or more parmesan cheese.
  7. Enjoy!

Recipe Notes

  • For a Dairy-Free Version: Use full-fat canned coconut cream (or dairy-free heavy cream) in place of the heavy cream. Simply omit the parmesan garnish or use your favorite dairy-free alternative.
  • Protein Boost: Stir in shredded rotisserie chicken, add sautéed shrimp during the last few minutes of cooking, or brown some spicy Italian sausage with the onions for a heartier meal.
